Frequently Asked Questions:

"Who are you?"

Well, my name is Nate and I'm a Food & Nutrition Science major at Appalachian State University in the beautiful mountains of Boone, NC. I love to rock climb, play guitar, run, work out, and shoot skeet. I've been studying nutrition as a hobby now for about 3 years and I'm excited to turn it into a career. I hope to attend graduate school for Food Chemistry or something similar.

"What's wrong with what I'm doing now?"

You've probably bought into the "fat is bad, saturated fat is even worse, and whole grain products are good" way of thinking that has dominated our mindsets for the last 50 or so years. You know what this has done for us? It's made 2 in 3 of us overweight and 1 in 3 obese. This is a problem that cannot continue to be ignored so the scientists and government that prescribed this for everyone can keep their reputations. Carbohydrates of all kinds (including whole grains, but especially processed and refined carbs) spike insulin levels in a way our bodies are not adapted to handle.

"So what do I eat?
"

In the words of Michael Pollan: "eat food." Real food. Whole food. Natural food. Meats, fish, vegetables, fruits, nuts, and recommended oils. Try to cut out (or at least limit) processed carbohydrates and other products that contain things like wheat, soybeans, rice, potatoes, and corn.

"This seems hard (and expensive).
"

It is at first, but it's a commitment to (and investment in) your health that will make you feel better and live better. After you feel the benefits and see the results of a real healthy diet, that carbohydrate-laden one the government and the domestic agriculture lobby wants you to eat doesn't seem so glamorous.
